  • 4 Tbsp oligosaccharide (or corn syrup/honey)
  • 3 Tbsp soy sauce

First, peel the potatoes thoroughly and cut them into bite-sized cubes. Ensure the pieces are not too large, as this helps them cook evenly and absorb the sauce more effectively.

To remove excess starch and ensure a cleaner taste, soak the cubed potatoes in cold water for about 20 minutes. This step prevents the potato pieces from sticking together during cooking and improves their texture.

Now, let’s prepare the braising liquid that will give the potatoes their signature flavor. In a pan, combine 2 tablespoons of cooking oil, 4 tablespoons of oligosaccharide, and 3 tablespoons of soy sauce. Stir well to mix.

Drain the soaked potatoes and add them to the pan with the seasoning mixture. Pour in enough water to come up about 80% of the way up the potatoes. Adding too much water can dilute the sauce, so aim for a ‘just enough’ amount.

Once the water begins to boil, cover the pan and simmer over medium-low heat for 10-15 minutes, or until the potatoes are tender. After simmering, remove the lid and continue to cook, allowing the excess liquid to evaporate and the potatoes to become glossy. Stir occasionally. Finally, sprinkle with toasted sesame seeds for an extra nutty flavor! Tip: For a touch of heat, consider adding one chopped Cheongyang chili pepper to the pot while braising. It adds a wonderful spicy kick!
