Cooking Instructions
Step 1
Crack 4-5 eggs into a bowl. Add a pinch of salt, 1 tablespoon of sugar, and 1 tablespoon of cooking wine (mirin). Whisk gently with a fork or whisk until the egg mixture is slightly frothy. This will be the base for your delicious toast.
Step 2
Melt 45g of butter in a pan over medium-low heat. Once the butter is melted and starts to sizzle gently, pour the prepared egg mixture evenly over the pan.
Step 3
As the egg mixture begins to set and form soft curds in the pan, carefully place the bread slices onto the egg layer before it’s fully cooked. If the egg is completely set, the bread won’t adhere well, so placing it when the egg is slightly undercooked is key.
Step 4
When the bottom of the egg layer turns golden brown and the edges start to look set, use a spatula to carefully flip the bread over. This prepares it for cooking on the other side.
Step 5
On the top side of the flipped toast, spread 3 tablespoons of honey evenly. If you prefer, you can substitute the honey with your favorite jam, such as strawberry or grape jam, for a different delicious flavor.
Step 6
Now, place the slices of cheese on top of the toast. One slice is delicious, but if you’re a cheese lover, feel free to add two slices for an even richer taste. The melting cheese will add a wonderfully gooey texture and flavor.
Step 7
If the egg mixture spread wider than your bread, gently fold the edges of the egg over the bread to create a neat, compact shape. This ensures a tidy presentation.
Step 8
To make folding the toast easier, use a spatula to gently press down the center of the bread. This creates a natural crease or line, making it simple to fold neatly.
Step 9
Finally, carefully fold the toast in half using the spatula. Place the folded toast back onto the pan and cook for a little longer over medium-low heat until the cheese is completely melted and gooey. Once the cheese is perfectly melted, turn off the heat and get ready to enjoy your delicious toast!
