I made pork chop steak as a daily side dish for the kids! I used pork tenderloin, which is light and very delicious. This super simple pork chop steak was a huge hit with the children.

Ingredients

  • Pork tenderloin 1.8kg (3 lbs), cut into bite-sized pieces for stir-fry
  • Bell peppers 2 (use a variety of colors for visual appeal)
  • Onions 2
  • King oyster mushrooms 4

Pork Marinade

  • Salt 1/2 tsp
  • Olive oil 5 tbsp
  • Sugar 1 tbsp
  • Mirin (or cooking wine) 3 tbsp
  • Black pepper, a pinch
  • Minced garlic 2 tbsp

Steak Sauce

  • Store-bought Tonkatsu sauce 150g (approx. 5.3 oz)
  • Oyster sauce 50g (approx. 1.8 oz)
  • Tomato ketchup 50g (approx. 1.8 oz)
  • Oligosaccharide (or corn syrup) 3 tbsp

Cooking Instructions

Step 1

Prepare the pork tenderloin. If it’s not already cut, slice it into bite-sized pieces suitable for stir-frying. Place the pork in a bowl. First, add 5 tablespoons of olive oil and gently mix it into the pork, coating each piece. Then, add 1/2 teaspoon of salt, 1 tablespoon of sugar, 3 tablespoons of mirin, a pinch of black pepper, and 2 tablespoons of minced garlic. Mix well again, ensuring all the seasonings are evenly distributed onto the pork. Cover the bowl with plastic wrap or a lid and let it marinate at room temperature for about 30 minutes. This resting period helps tenderize the meat.

Once the pork is well-marinated, heat a frying pan over medium heat. Add the pork pieces in a single layer (cook in batches if necessary to avoid overcrowding). Sear the pork on each side until it’s golden brown and nicely browned. Cooking the pork in this initial stage helps to seal in the juices, keeping it moist and tender.

If you have a smaller amount of pork, you can finish cooking it with the vegetables later. However, with a larger quantity like this, it’s best to cook the pork completely in the pan first. Once cooked, remove the pork from the pan and set it aside. You can then use the same pan to cook the vegetables, saving you on washing up.

Prepare your fresh vegetables. Chop the onions, bell peppers, and king oyster mushrooms into bite-sized pieces, roughly the same size as the pork. Cutting them uniformly ensures they cook evenly and look appealing in the final dish.

Add the chopped bell peppers to the frying pan. Stir-fry them over medium-high heat for about 1-2 minutes. Bell peppers are best when they are slightly tender but still have a pleasant crunch, so avoid overcooking them. You want them to retain their vibrant color and crispness.

Next, add the sliced king oyster mushrooms to the pan. Sauté them over medium-high heat until they are golden brown. Mushrooms absorb oil and release a wonderful savory flavor when cooked, giving them a satisfying texture that’s almost meat-like.

Now, it’s time to bring everything together for the pork chop steak. Use a large frying pan or a wok. Add the completely cooked pork and the stir-fried vegetables to the pan. At this stage, do not add the sauce yet; just combine the main ingredients.

Let’s make the delicious sauce that will elevate this dish! In a small bowl, combine 150g of tonkatsu sauce, 50g of oyster sauce, 50g of tomato ketchup, and 3 tablespoons of oligosaccharide (or corn syrup). Whisk or stir the ingredients together until well combined. This sauce provides a perfect balance of sweet and savory flavors that children will absolutely love!

Pour the prepared sauce over the pork and vegetables in the large pan. Reduce the heat to medium-low. Stir-fry everything quickly, tossing gently to coat all the ingredients evenly with the sauce. Be careful not to overcook at this stage; you want the vegetables and pork to remain tender and not mushy. Once the sauce has coated everything beautifully, immediately remove the pan from the heat. Serve this fantastic pork chop steak warm, perhaps over a bed of rice, for a meal that’s sure to be a hit with both kids and adults!
