Main Ingredients- 150g pork for duruchigi (thinly sliced pork belly or shoulder is ideal)
- 1 chili pepper (optional, for added spice)
- 1 clove garlic (thinly sliced for aroma)
Seasoning & Other Ingredients- 3-4 slices onion (sliced)
- 1 piece kimchi (cut into bite-sized pieces)
- 1/5 small tomato (for color and freshness)
- 3 slices bell pepper (using various colors adds visual appeal)
- 3-4 slices onion (sliced)
- 1 piece kimchi (cut into bite-sized pieces)
- 1/5 small tomato (for color and freshness)
- 3 slices bell pepper (using various colors adds visual appeal)
Cooking Instructions
Step 1
First, rinse the pork under cold water about 3 times to remove any excess blood. Pat it thoroughly dry with paper towels. This step helps reduce any gamey odor and ensures a cleaner taste.
Step 2
Finely chop the chili pepper. Thinly slice the garlic. Slice the onion and bell pepper into bite-sized strips (about 2cm long). Cut the kimchi into manageable pieces with scissors.
Step 3
Arrange the prepared pork evenly in the air fryer basket, making sure the slices do not overlap. Spreading the meat thinly will help it cook more evenly and quickly.
Step 4
Layer the prepared vegetables (onion, garlic, bell pepper, tomato) over the pork. Placing vegetables on top allows them to steam and become tender from the pork’s juices as it cooks.
Step 5
Wearing disposable gloves, gently mix 1/2 tsp of doenjang with the ingredients. Doenjang adds a savory depth and helps tenderize the meat. (This step is optional; you can also marinate the pork separately before placing it in the air fryer).
Step 6
Finally, place the cut kimchi pieces on top of the vegetables. The spicy and tangy flavor of the kimchi will enhance the overall taste of the duruchigi.
Step 7
Air fry at 170°C (338°F) for 10 minutes. After this time, the pork should be nicely cooked, but the vegetables might appear slightly charred. If you are concerned about the vegetables burning, adjust the cooking time or flip the ingredients halfway through. (Total cooking time may vary between 10-15 minutes depending on your air fryer model).
