Main Ingredients

  • 1 bunch fresh spinach (washed and trimmed)
  • 3 large eggs
  • 1/2 medium onion (finely chopped)
  • 1 small sweet potato (thinly sliced or cut into small cubes)
  • 1/2 ripe tomato (cut into bite-sized pieces)
  • 1/2 tsp salt (adjust to taste)
  • 1 Tbsp minced garlic

Cooking Instructions

First, prepare your vegetables. Trim the tough ends off the spinach, wash it thoroughly, and cut the longer leaves in half. Finely chop the onion. Slice the sweet potato thinly or cut it into small cubes. Remove the stem from the tomato and cut it into 2-3 pieces.

Heat 1-2 tablespoons of cooking oil in a pan over medium heat. Add the minced garlic and sauté until fragrant, being careful not to burn it. Add the chopped onion and cook until translucent. Once the onion is softened, add the sliced sweet potato and 1/2 teaspoon of salt. Sauté together until the sweet potato is slightly tender.

When the sweet potato is partially cooked, add the spinach to the pan. Stir gently for a few moments until the spinach wilts. Spinach cooks very quickly, so sauté it over medium-high heat for a short time. Once the spinach has wilted, reduce the heat slightly.

In a separate bowl, crack the 3 eggs and beat them well. Remove the chalaza (the white stringy bits) and whisk until smooth using a fork or whisk.

Reduce the heat to low. Pour the beaten eggs evenly over the vegetables in the pan. Arrange the cut tomatoes decoratively on top of the frittata. Cover the pan with a lid and let it cook gently over low heat for about 10-15 minutes, or until the eggs are fully set and the top is lightly firm. (For faster cooking, you can use an oven or air fryer.)
