Main Ingredients

  • 1 cup pancake mix (approx. 100g)
  • 1 egg (room temperature)
  • 1 coffee mix stick
  • 30ml hot water (2 Tbsp)
  • 4 Tbsp milk (approx. 60ml)
  • A little cooking oil (for greasing paper cups)

Garnish (Optional)

  • Powdered sugar, to taste
  • Maple syrup or honey, to taste

Cooking Instructions

First, pour 30ml (2 Tbsp) of hot water into 1 coffee mix stick and stir well until the coffee is completely dissolved. Using hot water helps the coffee dissolve better and enhances its aroma.

In a bowl, add 1 cup of pancake mix. Crack in 1 egg and pour in 4 Tbsp of milk. Mix with a whisk or spatula until smooth without any lumps. Finally, add the dissolved coffee mixture and stir until all ingredients are well combined and you have a smooth batter. Be careful not to overmix, as it can make the bread tough.

To prevent the bread from sticking to the paper cups, lightly grease the inside of the cups with cooking oil. You can also use baking parchment, but paper cups make cleanup easier and are more convenient.

Fill the prepared coffee batter into the paper cups, only up to about half their height. The batter will rise as it cooks, so filling them too much can cause overflow. Filling to 1/2 or 2/3 capacity is recommended.

Place the paper cups in the microwave and heat for 1 minute to cook the bread. The cooking time may vary slightly depending on your microwave’s wattage. After 1 minute, insert a skewer or toothpick; if it comes out clean without batter, it’s done. If not, microwave for an additional 10-20 seconds at a time.

Carefully remove the freshly baked coffee bread from the paper cups. For extra flavor, dust with powdered sugar or drizzle with maple syrup or honey to your liking. Enjoy your homemade coffee bread with its delightful coffee aroma and moist texture!
