Mini Kimbap Ingredients

  • 4 sheets of pickled radish (cut into 1/2 or 1/3 size, according to preference)
  • 3 eggs (finely julienned and pan-fried into omelet strips)
  • 1/4 carrot (thickly julienned and stir-fried with salt)
  • 2 bowls of warm cooked rice
  • 1 tsp sesame oil (for seasoning rice)
  • 1 tsp salt (for seasoning rice and stir-frying carrots)
  • 1 tsp toasted sesame seeds (for seasoning rice)
  • 5 sheets of dried seaweed for kimbap (cut into 4 equal pieces horizontally and vertically)

Cooking Instructions

Let’s start by preparing the fillings for our mini kimbap! Crack 3 eggs into a bowl and whisk them well. Lightly oil a pan and cook the eggs into thin omelets. Once cooled slightly, julienne the omelets into thick strips. Next, wash and thickly julienne the 1/4 carrot. Stir-fry the julienned carrots in a pan with a pinch of salt until they are still crisp. Finally, cut the pickled radish sheets into sizes of about 1/2 or 1/3 of the kimbap size to fit. (Tip: Instead of pickled radish, you can try adding spicy and sweet seasoned dried radish kimchi or chewy simmered konjac for a unique twist!)

Cut each sheet of kimbap seaweed in half both horizontally and vertically, so you end up with 4 smaller rectangular pieces. These smaller pieces are perfect for rolling mini kimbap. Now, let’s season the rice for the kimbap. In 2 bowls of warm cooked rice, add 1 tsp of sesame oil, 1 tsp of salt, and 1 tsp of toasted sesame seeds. Mix well until the rice is seasoned to perfection. Taste the rice – if it makes you think, ‘Ah, delicious!’, then it’s perfectly seasoned. Feel free to adjust the seasoning to your liking.

All the ingredients are ready, so let’s roll the mini kimbap! Place one small piece of seaweed on a cutting board. Spread a thin layer of the seasoned rice over the seaweed. Arrange the julienned egg omelet, stir-fried carrots, and sliced pickled radish neatly on top of the rice. Be careful not to overfill, or the kimbap might burst. Starting from the bottom edge of the seaweed, tightly roll the ingredients upwards to create cute mini kimbap! Their adorable size means you can make a bunch without feeling overwhelmed.
