Ingredients for Injeolmi
  • 1 cup sweet rice flour (glutinous rice flour)
  • 2 pinches of salt (approx. 0.5g)
  • Warm water (for dough, no specific amount)
  • Plenty of roasted soybean powder (for coating)

Cooking Instructions

Step 1

First, prepare a microwave-safe bowl. Add 1 cup of sweet rice flour and the 2 pinches of salt. Gradually add warm water while mixing to form a kneadable dough. The dough should come together without being too sticky or dry. If it’s too wet, add a little more sweet rice flour; if too dry, add a tiny bit more water.

Once the dough is formed, microwave it for 2 minutes (based on a 700W microwave). After 2 minutes, carefully remove the bowl (it will be hot!). Use a spoon or spatula to knead and mix the dough. Return it to the microwave and cook for another 2 minutes. Repeat this process one more time, for a total of 6 minutes of microwaving (2 minutes at a time, 3 times). This step is crucial for developing the chewy texture. Be cautious as the dough will be very hot.

Step 3

After the final microwave cycle, you’ll see a sticky, chewy dough. Now it’s time to coat it! Spread a generous amount of roasted soybean powder on a wide plate or tray. Wearing disposable gloves will prevent the sticky dough from adhering to your hands. Place the hot dough onto the soybean powder and generously coat all sides. Gently press the dough down with your hands to form a flattened rectangle, which makes cutting easier.

Now, cut the shaped injeolmi into bite-sized pieces. Using a regular knife can be difficult as the dough is sticky.
