Super Simple Microwave Egg Rice Bowl
The Perfect Combination of Leftover Rice and Eggs! Microwave Egg Rice Bowl Ready in 5 Minutes
Transform leftover cold rice into a wonderful meal! Make a moist and fluffy egg rice bowl easily using your microwave or air fryer. All you need is rice, eggs, and a few seasonings.
Main Ingredients- 1 serving of cold rice (approx. 200g)
- 2 large eggs
- 1/3 cup water (approx. 60ml)
- Pinch of salt
- Pinch of black pepper
Cooking Instructions
Step 1
First, place 1 serving (about 200g) of cold rice into a microwave-safe bowl. If the rice is clumped together, gently break it apart with a spoon.
Step 2
Crack 2 large eggs into the bowl with the rice, and add 1/3 cup (about 60ml) of water. You can adjust the amount of water based on the rice’s texture or your preferred consistency; add a little more water for a moister result. Add a pinch of salt and a pinch of black pepper, then gently mix everything together, being careful not to mash the rice grains.
Step 3
Add 2 tablespoons of chopped green onions and mix lightly. You can also use chives or other herbs instead of green onions.
Step 4
Cover the bowl tightly with plastic wrap and microwave for 4 to 5 minutes. The rice and eggs will begin to cook.
Step 5
Carefully remove the bowl from the microwave. Gently stir the egg rice with a spoon, then re-cover it with plastic wrap. This step helps ensure even cooking throughout. Return the bowl to the microwave and cook for another 2 to 3 minutes. The total cooking time may vary depending on your microwave’s power, so check to ensure the eggs are fully cooked and the rice is heated through.
Step 6
Once cooked, remove from the microwave and drizzle 1-2 teaspoons of pickled radish soy sauce or your favorite seasoned soy sauce over the bowl. You can also use other soy sauce-based sauces.
Step 7
Finally, drizzle 1 teaspoon of olive oil and 1 teaspoon of sesame oil over the dish for added flavor. Sprinkle with sesame seeds, if desired, for a delicious Microwave Egg Rice Bowl! Enjoy it warm immediately for the best taste.
