Introducing a recipe for Royal Stir-fried Rice Cakes (Gungjung Tteokbokki) that’s ready in a flash using leftover marinated beef bulgogi! Simply add tteokguk rice cakes to your pre-marinated bulgogi, which already includes onions and green onions, for an incredibly easy dish. Using tteokguk rice cakes instead of regular tteokbokki rice cakes allows the sauce to penetrate better, resulting in a more flavorful experience. We recommend using rice tteokguk cakes for an extra chewy texture. Enjoy this delicious Royal Tteokbokki, a perfect harmony of sweet and savory flavors, complemented by the aromatic notes of pepper and Sichuan peppercorn that will delight both adults and children!
Main Ingredients- Marinated Beef Bulgogi 350g (pre-marinated with onion and green onion)
- Tteokguk Rice Cakes 250g (rice cakes recommended)
- Scallions 3 stalks
Cooking Instructions
Step 1
First, soak the tteokguk rice cakes in cold water for about 1 hour. Once soaked, drain them thoroughly and set aside. (Using rice tteokguk cakes will give you a chewier texture.)
Step 2
Heat a lightly oiled pan over medium-high heat. Add the marinated beef bulgogi and stir-fry. Since the bulgogi is already seasoned and contains vegetables, this step is quick and easy.
Step 3
Once the beef is partially cooked, add the drained tteokguk rice cakes to the pan and continue to stir-fry. At this point, the flavor might become a bit diluted due to the addition of the rice cakes, so add 1.5 Tbsp of sweet soy sauce (Mat-ganjang) to adjust the seasoning.
Step 4
Next, add 1 tsp of Sichuan peppercorn powder and 2 twists of black peppercorns to balance the flavor and add a subtle kick. Stir well to ensure all ingredients are evenly coated with the sauce and the rice cakes absorb the flavors. Keep stirring until the rice cakes are tender and the sauce is well integrated.
Step 5
When the rice cakes are tender and the sauce has thickened slightly, it’s almost done. Add the 3 scallions, cut into long pieces similar to onion slices, and stir-fry quickly over high heat. The fresh green color of the scallions will make the dish look even more appealing.
Step 6
Just before turning off the heat, drizzle in 1 Tbsp of sesame oil and give it a final mix. The fragrant aroma of sesame oil completes this super simple Royal Tteokbokki made with leftover bulgogi. The savory and slightly sweet taste, combined with the chewy rice cakes and the aromatic notes of pepper and Sichuan peppercorn, creates a delightful flavor profile that cuts through any richness.
Step 7
Transfer the finished Royal Tteokbokki to a serving plate. Garnish generously with a sprinkle of sesame seeds for the final touch. This dish offers a perfect balance of sweet and savory flavors, making it a delightful meal for everyone, from kids to adults. Enjoy this incredibly delicious Royal Tteokbokki with its satisfyingly chewy rice cakes and rich bulgogi sauce – a recipe you’ll want to make again and again!
