Milk Ice Base

  • 200g Milk (approx. 200ml)
  • 40g Sweetened Condensed Milk (approx. 3 Tbsp)

Mango Bingsu Toppings

  • 1 cup Frozen Mango (about 300g fresh mango)
  • Sweetened Condensed Milk, to drizzle (adjust to taste)
  • 80g Plain Yogurt (about 4 Tbsp)
  • Vanilla Ice Cream, 1-2 scoops
  • Fresh Mint Leaves (for garnish, optional)

Cooking Instructions

Step 1

First, let’s make the creamy milk ice, the heart of our mango bingsu. In a resealable bag or a shallow, wide container, combine 200g of milk and 40g of sweetened condensed milk. Mix them well until smooth, ensuring there are no lumps. Then, spread the mixture as thinly and evenly as possible and freeze for about a day until completely solid. This makes it easy to crush later with a rolling pin.

After a day, take out the frozen milk ice pack. Let it sit at room temperature for about 5-10 minutes to slightly soften. Be careful not to let it melt too much, as this can create clumps. Once slightly pliable, use a rolling pin to crush the ice pack repeatedly until you achieve a fine, powdery texture, similar to shaved ice. Keep crushing until it’s as smooth as you like.

Generously scoop the finely crushed milk ice into your serving bowl. Work quickly to prevent it from melting. Drizzle sweetened condensed milk over the ice to your liking. If you prefer a sweeter dessert, feel free to add a bit more.

Now it’s time to add the mangoes. If using frozen mango, let it thaw slightly beforehand. If using fresh mango, cut it into bite-sized pieces. Cover about two-thirds of the milk ice in the bowl with the mango chunks. Then, add the smooth plain yogurt to fill the remaining space attractively.

Next, fill in any gaps around the yogurt and the edges of the bowl with more mangoes, ensuring a generous layer. The sweetness and tropical flavor of the mangoes will enhance the overall taste of the bingsu.

Finally, top the mangoes and yogurt with 1-2 generous scoops of cool, sweet vanilla ice cream. For a fresh touch and visual appeal, garnish with a few fresh mint leaves, if desired. Your delicious mango bingsu is now complete! Enjoy this refreshing dessert.
