Super Simple Korean Beef Bulgogi Stew
Quick & Easy Beef Bulgogi Stew Version
Enjoy this incredibly simple and delicious Korean Beef Bulgogi Stew at home. Tender beef and a rich broth make it a perfect side for rice!
Main Ingredients- Beef (for Bulgogi), 350g
- Onion, 1/2
- Carrot, a small amount (thinly sliced)
- Shiitake Mushroom, 1
- Green Onion, 1/2 stalk
- Enoki Mushroom, 1 packet
- Glass Noodles, 1 handful (soaked in water for 10 minutes)
Marinade & Broth- Korean Soy Sauce or Fish Sauce, 3 Tbsp
- Minced Garlic, 1/2 Tbsp
- Cooking Wine (Mirin, etc.), 1 Tbsp
- Plum Extract, 1 Tbsp
- Ginger Extract or Minced Ginger, 1/3 Tbsp
- Water, 300ml
- Korean Soy Sauce or Fish Sauce, 3 Tbsp
- Minced Garlic, 1/2 Tbsp
- Cooking Wine (Mirin, etc.), 1 Tbsp
- Plum Extract, 1 Tbsp
- Ginger Extract or Minced Ginger, 1/3 Tbsp
- Water, 300ml
Cooking Instructions
Step 1
First, lightly pat dry the beef for bulgogi. In a bowl, combine the beef with the marinade ingredients (Korean soy sauce/fish sauce, minced garlic, cooking wine, plum extract, ginger extract) and gently mix. Let it marinate for 10 minutes. Make sure to loosen any clumps of meat with chopsticks so the marinade can penetrate evenly.
Step 2
Wash and prepare the vegetables. Slice the onion thinly. Slice the carrot thinly, either crosswise or into matchsticks. Remove the stems from the shiitake mushroom and slice the caps. Cut the green onion diagonally.
Step 3
Heat a pan over medium-high heat. Add the marinated beef, prepared onion, carrot, and shiitake mushroom. Pour in the pre-soaked glass noodles and 300ml of water. Cover the pan and bring to a boil over high heat.
Step 4
Once boiling, reduce the heat to medium. Add the diagonally sliced green onion. Let it simmer until the glass noodles are cooked through and the broth has slightly reduced. (Tip: Soaking the glass noodles beforehand will help them cook faster.)
Step 5
Finally, separate the enoki mushrooms into strands and add them to the pan. Cook for just another minute or two until the mushrooms are tender. Turn off the heat and serve. Your super simple Korean Beef Bulgogi Stew is now complete! Enjoy it with a warm bowl of rice.
