Super Simple King Oyster Mushroom Salad

Today, I’m sharing an incredibly easy side dish recipe that anyone can make. It’s almost embarrassingly simple! This is the most straightforward, simple, and delicious way to enjoy king oyster mushrooms, which are said to resemble large oyster mushrooms. King oyster mushrooms are known for their health benefits, including cancer prevention, antioxidant properties, hydration, diabetes management, gut health, cardiovascular disease prevention, immune system enhancement, and anemia prevention. They are also low in calories. Shall we get our hands messy and mix up some delicious mushrooms!

Main Ingredients

  • 6 King Oyster Mushrooms
  • 1/2 Tbsp Coarse Salt (for blanching)
  • 1/2 Tbsp Minced Garlic (optional, for extra flavor!)

Cooking Instructions

First, wash the king oyster mushrooms thoroughly. Trim off any dirty ends from the base. Then, slice the mushrooms lengthwise into thin strips, about 0.3-0.5 cm thick. Slicing them too thinly can reduce their chewy texture, so aim for a moderate thickness.

Bring a pot of water to a rolling boil, adding 1/2 Tbsp of coarse salt. Once boiling, carefully add the sliced mushrooms and blanch them for about 20 seconds, stirring gently. It’s crucial not to overcook them, as they can become mushy. Immediately drain the blanched mushrooms in a colander. Be careful, as they are hot! Let them cool naturally while draining. Once they are somewhat cooled, gently squeeze them by hand to remove as much excess water as possible. This step is key to ensuring the mushrooms don’t become watery and absorb the seasoning well.

Place the squeezed mushroom strips into a large mixing bowl. Add 1 Tbsp of Korean soy sauce (or regular soy sauce), 1 Tbsp of toasted sesame oil, and 1 Tbsp of toasted sesame seeds for a nutty flavor. For an extra kick of aroma, you can also add 1/2 Tbsp of minced garlic. Now, gently mix everything together with your hands until the seasonings are evenly distributed. Avoid over-mixing or squeezing too hard, as this can break the mushroom pieces. Once beautifully seasoned, transfer the Super Simple King Oyster Mushroom Salad to a serving dish. Enjoy this delicious and incredibly easy side dish with your meal!
