Super Simple King Oyster Mushroom Rice Bowl

This is a super simple King Oyster Mushroom Rice Bowl that I highly recommend for students living alone. It’s incredibly easy to make!

Ingredients

  • 1 serving of rice
  • 2 King Oyster Mushrooms
  • 1 Cheongyang Pepper (optional, for spiciness)
  • 5g Green Onion (white part preferred)
  • 2 slices Butter (or 1 Tbsp)

King Oyster Mushroom Braising Sauce

  • 0.5 Tbsp Oyster Sauce
  • 1 Tbsp Soy Sauce
  • 0.5 Tbsp Brown Sugar
  • 50ml Water (approx. 1/4 cup)
  • 1 Tbsp Corn Syrup
  • 2 tsp Vinegar

Finishing Touches (Optional)

  • 1 pinch Black Pepper
  • 0.5 Tbsp Sesame Oil
  • 0.5 Tbsp Toasted Sesame Seeds

Cooking Instructions

Step 1

First, prepare the King Oyster Mushrooms. Trim off the hard ends of the stems. Rinse them briefly under running water to remove any dirt or debris. Then, slice them lengthwise into thin pieces, about 0.5mm thick. Slicing them too thickly might prevent the sauce from absorbing well.

The Cheongyang pepper will add a nice kick of heat. Remove the seeds and mince it very finely. Finely chop the green onion as well. These ingredients will enhance the overall flavor of your rice bowl.

Melt the 2 slices of butter in a heated pan over medium heat. Once the butter is melted, add the sliced King Oyster Mushrooms. Sauté them for about 30 seconds per side, flipping them to coat evenly with the buttery aroma. This step is key to infusing the mushrooms with a delicious butter flavor. Once the mushrooms are slightly cooked, add about 50ml of water to the pan.

Now it’s time to braise the mushrooms. Add all the King Oyster Mushroom Braising Sauce ingredients: 0.5 Tbsp oyster sauce, 1 Tbsp soy sauce, 0.5 Tbsp brown sugar, 1 Tbsp corn syrup, and 2 tsp vinegar to the pan. Mix everything together evenly. It’s best to simmer over medium-low heat rather than high heat, allowing the sauce to penetrate the mushrooms thoroughly.

The sauce will start to thicken, and the mushrooms will become glossy. Simmer for about 3 minutes, then reduce the heat slightly. Add the finishing ingredients: 1 pinch of black pepper, 0.5 Tbsp sesame oil, and 0.5 Tbsp toasted sesame seeds. You can skip the sesame oil and seeds if you prefer.

Give everything a gentle stir to ensure the sauce coats the mushrooms evenly. Turn off the heat immediately. While the pan is still warm, add the minced Cheongyang pepper and stir it in. This retains the fresh, spicy flavor of the pepper.

Give it one final stir to combine all the ingredients, and your delicious braised King Oyster Mushrooms are ready! Serve generously over a bowl of warm rice for a fantastic rice bowl. It’s incredibly simple but makes for a wonderful meal.
