  • 100g dried glass noodles (dangmyeon), pre-cut (about the size of a thumb and index finger circle)
  • 1/2 onion, thinly sliced
  • 1/3 carrot, thinly sliced
  • 1 fish cake (eomuk), thinly sliced
  • 1 cup chives (buchu), cut into 4-5 cm lengths
  • A pinch of toasted sesame seeds (for garnish)

Simple Seasoning

  • 1/2 cup water (100ml)
  • 3 Tbsp soy sauce
  • 1 Tbsp oyster sauce
  • 1 Tbsp sesame oil
  • 1 Tbsp cooking oil
  • 2 Tbsp sugar

Cooking Instructions

First, soak the 100g of pre-cut glass noodles in lukewarm water for at least 10 minutes until they are pliable. This step is crucial for ensuring the noodles absorb the sauce well and achieve the perfect chewy texture. (While this is the most time-consuming part, the rest of the process is incredibly quick and easy!)

In a deep pan or pot, combine 1/2 cup water, 3 Tbsp soy sauce, 1 Tbsp oyster sauce, 1 Tbsp sesame oil, 1 Tbsp cooking oil, and 2 Tbsp sugar. Stir well to mix the sauce. Add the soaked glass noodles and toss to coat them evenly with the seasoning. Arrange the sliced carrots, onions, and fish cake on top. Cook over medium heat until the liquid is just enough to moisten the ingredients, simmering gently.

Once the mixture is simmering and the liquid has reduced slightly, add the 1-cup of chives (cut into 4-5 cm lengths). Stir-fry gently until the chives just begin to wilt. Be careful not to overcook the chives, as they can become mushy.
