- Compound Chocolate Chips 260g (choose milk, dark, or white based on preference)
- Roasted Almonds 100g
- Toasted Walnuts 100g

Step 1
First, let’s prepare the nuts. Blanch the walnuts in boiling water for about 1 minute, then rinse them under cool running water and drain well. This step helps to mellow any bitterness and enhance their nutty flavor. After draining, place the walnuts in an air fryer set to 180°C (350°F) and toast for 6 minutes until fragrant and slightly crisp.
Step 2
Finely chop the toasted walnuts (100g) and roasted almonds (100g). It’s best to chop them coarsely rather than into a fine powder, as this will provide a pleasant texture when coated on the snacks. You can use a food processor or a knife for chopping.

Now, it’s time to melt the chocolate. Prepare two bowls of different sizes. Pour hot water into the larger bowl, and place the smaller bowl inside it to create a double boiler setup. Add the compound chocolate chips (260g) to the smaller bowl. Stir gently as the chocolate melts, using the steam from the hot water. Ensure the chocolate melts into a smooth, lump-free consistency.
Step 4
Time to coat the snacks! Dip the cheese sticks one by one into the melted chocolate. Use a chopstick or fork to ensure they are evenly coated. Once coated, immediately roll the chocolate-covered cheese sticks in the prepared mixture of chopped nuts (almonds and walnuts) and sesame seeds. Gently press the nuts onto the chocolate to help them adhere well.

Set aside about 20 cheese sticks to be shaped into the final Pocky-style snacks. If you have any leftover chocolate, mix in all the chopped nuts and sesame seeds from the coating mixture. This can be used as a decorative topping or poured into molds to create chocolate bars. Arrange the finished snacks neatly on a tray lined with parchment paper or in molds. Refrigerate for about 20 minutes, or until the chocolate is firm. Be careful not to over-chill, as the chocolate can become too hard.
