I made these delicious zucchini pancakes without any flour, using only eggs, with zucchini that my brother-in-law grew in his garden and left by my door. They have a wonderfully tender and savory texture, perfect for the whole family to enjoy. Highly recommended for anyone on a diet or looking for a healthy snack!

  • 1/2 zucchini
  • 2 red bell peppers (or red chili peppers)
  • 2 eggs
  • Cooking oil, for frying

First, wash the zucchini thoroughly and pat it dry. Slice it into strips about 0.5 cm thick. If the seed part is too large, it can make the texture mushy, so it’s best to remove some of it. Remove the seeds from the red bell peppers (or red chili peppers) and chop them finely to match the length of the zucchini, adding a nice splash of color. Lightly sprinkle salt over the sliced zucchini and bell peppers and let them sit for about 5 minutes. This will draw out moisture, making the zucchini more tender and lightly seasoned. Gently squeeze out any excess water after salting.

In a large bowl, crack in the 2 eggs. Beat them with a fork or whisk to break up the chalazae (the white stringy bits) and mix well. Add the salted zucchini and bell peppers to the bowl and gently mix everything together to form a batter. Be careful not to overmix, as this can cause the zucchini to become mushy.

Heat a non-stick pan over medium heat and add a generous amount of cooking oil. Once the oil is shimmering, spoon the batter onto the pan, forming round pancakes. Try to make them about one bite in size and not too thin, as they can fall apart easily if made too thin.

Reduce the heat to medium-low. Once the edges of the pancakes start to look cooked, carefully flip them using a spatula. Cook on the other side until golden brown and the zucchini is tender and slightly translucent. The egg should be cooked through and slightly fluffy.

In a small bowl, combine 2 tablespoons of soy sauce, 1 tablespoon of mirin (or rice wine), 1/2 tablespoon of vinegar, a dash of sesame oil, and a pinch of sesame seeds. Mix well until combined. This savory and tangy sauce is a perfect accompaniment to the zucchini pancakes.
