Main Ingredients- 200g fresh chives
Seasoning Ingredients- Pinch of Korean sea salt
- 1/2 Tbsp fish sauce (anchovy or sand lance)

Cooking Instructions
Step 1
After cleaning, cut the chives into approximately 4-5cm lengths, making them easy to eat. If they are too long, they can be difficult to mix.

Bring a generous amount of water to a rolling boil in a pot. Once boiling, add a pinch of salt, then briefly blanch the prepared chives for just 15-20 seconds. Be careful not to overcook them, as chives can become mushy and lose their crisp texture if blanched for too long.
Step 3
Immediately remove the blanched chives from the hot water and rinse them quickly under cold running water. Rinsing in cold water helps maintain their crisp texture. Squeeze out as much water as possible to prevent the salad from becoming watery; lightly press them with your hands or use paper towels to thoroughly remove excess moisture.
Step 4
Place the de-watered chives in a bowl. Add all the prepared seasoning ingredients: fish sauce, salt, and sesame oil. Gently toss and mix the chives with your hands until the seasoning is evenly distributed. Your delicious chive salad is now complete! If it tastes bland, add a little more salt. For an extra touch of umami, you can add a tiny amount of minced garlic.
