Super Simple Gochugaru Oil (Layu) Recipe

This recipe provides an easy way to make Gochugaru oil, perfect for use in various dishes.
Ingredients
- 1 cup cooking oil
- 1/2 cup gochugaru (Korean chili flakes)
- 1 Tbsp sesame oil
Cooking Instructions
Step 1
First, prepare a frying pan or a pot with some depth. Pour 1 cup (approx. 200ml) of cooking oil into the pan and heat it slowly over medium-low heat. Be careful, as the gochugaru can burn if the oil is too hot.
Step 2
In a separate bowl (a stainless steel bowl is recommended), place 1/2 cup (approx. 50g) of gochugaru. Having it ready in a separate bowl makes it easy to pour the oil. Now, you’ll pour the heated oil over the gochugaru. A great tip to check the temperature: scoop out a tablespoon of the hot oil and pour it gently onto a small amount of gochugaru. If it sizzles and bubbles up vigorously, it’s the perfect temperature for infusing the chili flakes. Reduce the heat to low and pour the remaining oil over the gochugaru in the bowl.
Step 3
Finally, add 1 tablespoon (approx. 15ml) of sesame oil for a nutty aroma and flavor. Sesame oil has a low smoke point, so adding it at the end prevents it from burning and preserves its fragrance. Stir everything together well to create your delicious gochugaru oil. Once completely cooled, store it in a sterilized glass jar in the refrigerator.
