Introducing a quick and easy fried rice recipe perfect for solo diners. This recipe utilizes convenient frozen vegetables, making it a breeze to prepare a delicious and satisfying meal without any leftovers. Nowadays, pre-chopped frozen vegetables are readily available, allowing you to create wonderful dishes with ease. While this basic recipe uses just eggs, salt, and pepper, adding frozen vegetables enhances its color and texture. We’ll explore two versions based on how the eggs are cooked, so choose the one that suits your preference!
Basic Ingredients- 1 cup frozen mixed vegetables
- 2 Tbsp chopped scallions (green onions)
- 4 cups cooked rice
- 1 Tbsp salt
- 1 tsp black pepper
- 2 large eggs
- 2 Tbsp cooking oil
- 1 tsp sesame oil
Cooking Instructions
Step 1
Here’s the first version of our fried rice. Start by heating 2 Tbsp of cooking oil in a pan over medium heat. Add 2 Tbsp of chopped scallions and sauté until fragrant. Once the scallions are lightly cooked, crack in 2 large eggs and scramble them well in the pan until no liquid egg remains.
Step 2
Reduce the heat to low. Continue to cook the eggs, stirring them as if making scrambled eggs, until they are softly set. Be careful not to overcook them.
Step 3
Now, add 1 cup of frozen mixed vegetables, 1 Tbsp of salt, and 1 tsp of black pepper. Stir-fry everything together with the scrambled eggs. You can use leftover rice or even frozen rice – just make sure to break up any clumps with your spatula as you stir-fry.
Step 4
For a touch of heat, you can add 2 finely chopped Korean chili peppers (cheongyang peppers) and stir-fry them with the other ingredients. (Tip: If you pre-chop chilies and freeze them, they are super convenient to use whenever needed!)
Step 5
Once everything is well combined and stir-fried, turn off the heat. Drizzle in 1 tsp of sesame oil for extra flavor and shine. Give it a final gentle toss to ensure everything is evenly mixed.
Step 6
Your vegetable fried rice is ready! The rice grains remain distinct and fluffy, giving it a delightful texture. Enjoy this visually appealing and delicious fried rice for a satisfying meal!
Step 7
For the second version, we’re going for maximum simplicity. If you’re cooking for one, you can toss everything into the pan at once. Heat 2 Tbsp of cooking oil in your pan. Add the chopped scallions, frozen mixed vegetables, eggs, and chopped chili peppers all together. Stir-fry, making sure the eggs are well incorporated with the vegetables. Think of it as coating the vegetables with a thin layer of egg as you cook.
Step 8
Once the ingredients are partially cooked, add the rice. Stir and toss everything together, ensuring the rice grains don’t clump. Season with salt and pepper to your taste.
Step 9
And there you have it – a super simple fried rice made with frozen vegetables in no time! Even though everything was cooked together, the result looks and tastes fantastic. Enjoy this recipe that perfectly balances convenience and flavor!
