Main Ingredients
  • 1 bowl of cold cooked rice (approx. 200g)
  • 2 sticks of imitation crab meat (surimi, approx. 60g)
  • A little bit of ham (approx. 30g)
  • 2 sticks of pickled radish (danmuji, approx. 40g)
  • 1 large egg

Seasoning & Garnish
  • 1 pinch of salt (approx. 0.5g)
  • Cooking oil, for frying
  • 1 Tbsp ketchup

Cooking Instructions

Step 1

Place 1 bowl of cold cooked rice into a wide mixing bowl. If the rice is clumped together, gently break it apart with a spoon.

Step 2

Prepare your imitation crab meat, ham, and pickled radish. Finely chop the imitation crab meat and ham. Lightly drain the pickled radish and then mince it finely. Chopping the ingredients finely helps them mix well with the rice and makes the rice pancakes hold their shape nicely.

Step 3

Add all the finely chopped ham, imitation crab meat, and pickled radish to the bowl with the rice. Crack in 1 egg and add a pinch of salt. Taste the mixture and adjust seasoning with a tiny bit more salt if needed. Mix everything thoroughly with a spoon or your hands until well combined.

Step 4

Heat a frying pan over medium-low heat and add a generous amount of cooking oil. Spoon portions of the rice mixture onto the hot pan, shaping them into small, flat, round pancakes. Cook until golden brown and slightly crispy on both sides. Remember to flip them occasionally to ensure even cooking and prevent burning.

Step 5
