Enoki mushrooms are a budget-friendly and delicious find at the grocery store. Did you know they’re not just for soybean paste stew? When made into a pancake, they become wonderfully savory and tender! This is also a perfect way to use up mushrooms that are nearing their expiration date. Prepare for a dish that vanishes in moments! With this super simple recipe, anyone can make it with ease.
Main Ingredients
- 1 pack Enoki mushrooms (approx. 100g)
- A little scallion, finely chopped (white part preferred)
- 1 large egg (or 2 small eggs)
- 2 tablespoons pancake mix (buchim garu)
- 2-3 pinches of salt (adjust to taste)
- A pinch of black pepper
Cooking Instructions
Step 1
First, trim off any unsightly parts from the base of the enoki mushrooms. Gently separate the caps into individual strands. Finely chop the scallions. It’s best not to chop the enoki mushrooms too finely, as this preserves their delightful texture. Aim for bite-sized pieces.
Step 2
In a bowl, combine the prepared enoki mushrooms and chopped scallions. Crack in the egg. Add the pancake mix, salt, and pepper. Mix everything thoroughly until well combined. If the batter seems too watery, add a little more pancake mix. If it’s too stiff, add another egg to achieve a smooth, pancake-like consistency.
Step 3
Heat a non-stick pan over medium heat and add a generous amount of cooking oil. Carefully drop spoonfuls of the batter onto the hot pan, leaving some space between each pancake. Try not to overcrowd the pan. You can shape them into neat rounds or slightly elongated ovals.
Step 4
Once the bottom side of the pancakes turns golden brown and is cooked through, gently flip them using a spatula. Be delicate to prevent them from breaking apart. Wait until the egg mixture is set and the mushrooms are tender before flipping.
Step 5
Cook the other side until it’s also golden brown and crispy. Once both sides are beautifully browned, your savory and tender enoki mushroom pancakes are ready! They are best enjoyed immediately while warm. You can also serve them with a side of soy sauce for dipping, if desired.
