Super Simple Enoki Mushroom Fried Rice
Transform Your Extra Enoki Mushrooms into Delicious Fried Rice!
I recently got a generous amount of enoki mushrooms and was wondering what to make. Then, I thought of fried rice and decided to give it a try! This recipe is incredibly simple and perfect for using up leftover rice and those enoki mushrooms. The chewy texture of the enoki and its savory flavor infuse every grain of rice, creating a satisfying meal with minimal ingredients. It’s easy enough for anyone, from students living alone to beginner cooks!
Main Ingredients- 1 handful of pork or ham (approx. 50g, choose your preference)
- 1 fresh enoki mushroom (trim the base and separate into strands)
Seasonings- 3 Tbsp soy sauce or oyster sauce (adds depth of flavor)

- Pinch of herb salt (can be used instead of regular salt)

Cooking Instructions
Step 1
First, prepare the enoki mushrooms. Trim off the woody base, then gently shake to separate the mushroom clusters into individual strands. This helps the seasoning penetrate better and improves the texture.
Step 2
If you’re using pork or ham, dice it into small, bite-sized pieces that will mix well into the fried rice. You can cut it slightly thicker for a chewier texture or finer for a softer bite, depending on your preference.
Step 3
Heat a frying pan over medium-high heat and add a generous amount of cooking oil. Add the diced pork or ham and sauté until lightly browned, rendering out its fat. This also helps to remove any gamey smell from the pork. (If using ham, you can skip this step).
Step 4
Once the pork is partially cooked, add all the prepared enoki mushrooms to the pan and stir-fry them together. Enoki mushrooms cook quickly, so be careful not to overcook them. Sauté for just 1-2 minutes to maintain their pleasant chewy texture.
Step 5
Now, it’s time to season the fried rice! Pour the soy sauce or oyster sauce (3 Tbsp) around the edges of the pan to allow it to caramelize slightly and release its aroma as you stir. Add the black pepper and herb salt to your liking, and stir-fry until all the ingredients are well combined. Using oyster sauce will add a wonderful umami flavor!
Step 6
Reduce the heat slightly and add the cooked rice. Use a spatula to gently break up any clumps of rice and stir-fry everything together. It’s important to fry the rice sufficiently so that the enoki mushrooms and seasonings coat every grain. Continue stir-frying until the rice grains become distinct and slightly toasted for the best flavor.
