This morning, I watched the gentle and emotional Japanese movie ‘Happy Birthday.’ The story of the protagonist’s mother writing birthday cards for her daughter until she turns 20, and the father faithfully delivering them each year, was truly touching. After watching such a heartwarming, realistic, and neighborly film, I felt a bit peckish. So today, I made this incredibly simple yet delicious ‘Egg Toast’! You can make it in just 5 minutes using only a microwave and an oven (or air fryer), making it ideal for busy mornings or a quick snack. The combination of a soft-boiled egg and melted cheese creates a wonderfully moist and savory flavor!

  • 1 egg
  • Mayonnaise
  • Sugar
  • A little shredded cheese

First, prepare one slice of bread that will be the base of your toast. Spread a thin layer of mayonnaise evenly over this slice. The mayonnaise will add moisture to the bread. Then, sprinkle a tiny amount of sugar over the mayonnaise. As the sugar melts, it will add a subtle sweetness, enhancing the overall flavor.

Now, let’s prepare the top slice of bread. Using a cup or a round cookie cutter, carefully cut out a circle from the center of the second slice of bread. This creates a well to hold the egg neatly. Place this cut bread slice on top of the mayonnaise-spread base slice. Gently crack one egg into the hole you’ve created. The size should be just right to prevent the egg from spilling out as it cooks. Finally, sprinkle some shredded cheese over the egg, and add a pinch of salt and pepper to taste, according to your preference.

It’s time to finish your amazing egg toast without even using an oven! First, microwave the toast for about 1 to 1 minute 30 seconds, just enough to set the egg white. Be careful not to overcook, or the yolk will become hard. As soon as the egg white is slightly set, quickly transfer the toast to an oven or air fryer (preheated to 180°C or 350°F) and bake for another 3 to 5 minutes. This will melt the cheese beautifully and toast the bread to a delightful crisp. Take it out while it’s hot and cut it into portions. Behold, your delicious egg toast with a perfectly runny yolk!
