Key Ingredients

  • 1.5 cups cooked rice
  • 3 large eggs
  • 1/4 tsp salt
  • 2 Tbsp cooking oil
  • 1 stalk green onion
  • 1 cup kimchi (including juice)

Cooking Instructions

Step 1

First, prepare 1.5 cups of cooked rice. Place the rice in a large bowl. Crack 3 large eggs into the bowl and add 1/4 teaspoon of salt. Using a spoon or spatula, gently mix everything together. Be careful not to mash the rice grains. The goal is to coat each grain of rice with the egg mixture and salt. This technique helps prevent the rice from clumping when fried and results in a softer texture.

Step 1

Step 2

Now, let’s get ready to stir-fry. Heat a frying pan over medium heat and add 2 tablespoons of cooking oil. Finely chop 1 stalk of green onion and add it to the hot oil. Sauté the green onions until they become fragrant and slightly softened, infusing the oil with their aroma. This creates a flavorful ‘scallion oil’.

Step 2

Step 3

Once the scallion aroma is released, add 1 cup of kimchi to the pan. If your kimchi pieces are large, you can cut them into smaller, bite-sized pieces with scissors for better integration with the rice. Stir-fry the kimchi in the scallion-infused oil until it’s nicely softened. This process reduces some of the kimchi’s sharpness while enhancing its savory flavor.

Step 3

Step 4

Finally, add the rice mixture (rice mixed with egg and salt) to the pan. Increase the heat to medium-high and stir-fry quickly but thoroughly. Ensure every grain of rice is coated with the oil, kimchi, and egg. Continue stir-frying until the rice is fluffy and has a delicious, appetizing color. Your tasty Egg Kimchi Fried Rice is ready! Enjoy it immediately while it’s warm for the best flavor.
