Pancake Batter & Ingredients- 200g pancake mix
- 10 shrimp (halved and deveined)
- 1 squid (cleaned and cut into bite-sized pieces)
- 1 bell pepper (seeds removed and thinly sliced)
- 2 Korean green chili peppers (seeds removed and finely chopped, adjust for spice preference)
- 1 bunch of scallions (trimmed and washed, cut into 3 sections)
- 2 eggs (lightly beaten)
Cooking Instructions
Step 1
First, let’s prepare the seafood. Devein and peel the shrimp, then cut them in half for easier eating.
Step 2
Similarly, clean the squid, remove the ink sac and cartilage, and then cut it into bite-sized pieces. The chewy texture will enhance the pancake’s appeal.
Step 3
Using different colored bell peppers will make your pajeon more visually appealing. Remove the seeds and slice them thinly into strips. They add a delightful crunch.
Step 4
Fresh scallions are the star of any pajeon! Wash them thoroughly, trim the roots, and cut them into about 5-7cm lengths (3 sections). This size helps maintain a nice shape when cooked.
Step 5
In a bowl, gently beat the eggs until slightly frothy. These will act as a binder for the toppings later on.
Step 6
Now, let’s make the batter. In a bowl, gradually add water to the 200g of pancake mix, stirring until you achieve a very thin consistency, almost like pouring cream. This ensures a light and crispy pancake.
Step 7
Heat a generous amount of cooking oil in a pan over medium-high heat. Pour a ladleful of the thin batter and spread it out thinly. As soon as you hear it sizzling, immediately lay the prepared scallions generously over the batter.
Step 8
Arrange the sliced bell peppers and the prepared seafood (shrimp and squid) evenly on top of the scallions. Generous toppings are key to a flavorful pancake.
Step 9
If you enjoy a bit of spice, sprinkle the finely chopped Korean green chilies over the toppings for a pleasant kick that balances the richness.
Step 10
Finally, lightly drizzle the beaten egg mixture over the toppings. The egg acts as a binder, helping everything stick together as it cooks. Be careful not to add too much.
Step 11
Reduce the heat to medium and cook until the bottom is golden brown and crispy. Then, using a wide spatula, carefully flip the pancake. A swift flick of the wrist will help keep its shape intact. (Be cautious!)
Step 12
Cook the other side until golden brown, and your delicious Dongnae Pajeon is ready! Serve hot with a side of soy dipping sauce. Enjoy! @6939378
