Key Ingredients- 2 Eggs
- 1 bowl of freshly cooked rice (slightly less than a full bowl)
- 2-3 pinches of seasoned salt (adjust to taste)
- A pinch of sesame seeds (for garnish)
- 3 swirls of cooking oil (use generously)
Cooking Instructions
Step 1
Heat a generous amount of cooking oil in a pan over medium-low heat. Once the pan is preheated, crack in 2 eggs and cook them. It’s best to cook them gently, similar to making a fried egg. As the egg whites begin to set around the edges, adjust the heat to prevent burning.
Step 2
When the egg whites are almost fully cooked, add the prepared rice to the pan. Use a spatula to gently break up any clumps of rice and mix it with the egg. I personally prefer more egg than rice, as I really enjoy eggs! The ratio of rice to egg can be adjusted according to your preference.
Step 3
Using the spatula, break down the eggs and stir-fry them together with the rice. It’s important to stir-fry until the rice grains become fluffy and each grain is coated with egg. Once it’s well combined, sprinkle in the sesame seeds and add 2-3 pinches of seasoned salt to season. Since this is for children, it’s best not to over-salt. I recommend tasting a pinch before adding more salt to adjust to your palate. This way, the food won’t easily become too salty and will maintain the right seasoning.
