  • Ingredient Category : Eggs / Dairy
  • Occasion : Everyday
  • Cooking : Stir-fry
  • Servings : 1 serving
  • Cooking Time : Within 15 minutes
  • Difficulty : Anyone

Main Ingredients
  • 1 bowl of warm cooked rice
  • 1/2 stalk of scallions (green onions)
  • 1/3 small onion
  • 3 large eggs
  • 4 Tbsp canola oil
  • Pinch of salt

Cooking Instructions

Step 1

First, prepare the aromatics that will add flavor to your egg fried rice. Trim the root of the onion, peel it, and then finely mince it into small pieces, about 0.5cm in size.

Step 2

Thinly slice the green onions (scallions), using both the white and green parts. The fragrant aroma of the scallions will greatly enhance the taste of the fried rice.

Step 3

Now, get your pan ready for frying. Heat it over medium heat.

Step 4

Once the pan is hot, generously add 4 tablespoons of canola oil. You can substitute with other cooking oils if preferred.

Step 5

Add the minced onion and sliced green onions to the heated pan.

Step 6

Continue to stir-fry over medium heat, making sure the vegetables don’t burn. Sauté them for about 2-3 minutes until the onions become slightly translucent and a fragrant aroma is released.

Step 7

As the fragrant scent of the scallions starts to emerge, it’s time to add the star ingredient: eggs. Crack 3 large eggs into a separate bowl and whisk them lightly.

Step 8

Pour the whisked eggs directly over the vegetables cooking in the pan.

Step 9

Using a spatula or chopsticks, gently stir the eggs as they cook to prevent them from clumping. Aim for a fluffy, scrambled egg texture.

Step 10

When the eggs are about 70-80% cooked and have a soft, fluffy appearance, it’s time to add the rice.

Step 11

Add one bowl of warm cooked rice to the pan. If you’re using leftover cold rice, make sure to warm it up beforehand to ensure the fried rice doesn’t become clumpy.

Step 12

Gently break up the rice with your spatula and stir everything together – the rice, eggs, and vegetables. Make sure each grain of rice is coated with flavor.

Step 13

Finally, add a pinch of salt to season. Start with a small amount and taste as you go, adjusting the seasoning as needed.

Step 14

If the rice is hot, turn off the heat. Use the residual heat of the pan to continue stirring and fluffing the rice until it’s perfectly cooked and separate. This prevents the rice from becoming mushy. Taste again and add a little more salt if necessary to reach your desired flavor.

Step 15

And there you have it – the world’s easiest egg fried rice is ready! It’s simple, satisfying, and a perfect meal. Enjoy your delicious creation!
