Step 1

Today, we’re making Baek Jong-won’s super simple cucumber salad – a refreshing, sweet, and tangy dish that’s surprisingly clean-tasting. It’s perfect for whetting your appetite!

Step 2

First, wash the cucumber thoroughly. Take a little coarse salt in your palm and gently rub the surface of the cucumber. This helps to make the cucumber crisper and removes any impurities.

Step 3

You’ll notice small bumps or protrusions on the cucumber’s skin. You can gently scrape these off with a peeler or the back of a knife. While this step is optional, doing so will result in a smoother texture and a more pleasant eating experience.

Step 4

Slice the cucumber into thin, round pieces, about 0.5 cm thick. Thinly slice the onion as well. Chop the scallions or green onions finely.

Step 5

Now, let’s prepare the seasoning. In a bowl, combine 1/2 Tbsp sugar, 1.5 Tbsp gochugaru, 2 Tbsp vinegar, 1 Tbsp soy sauce, 1 tsp minced garlic, and the chopped scallions and sesame seeds.

Step 6

Gently mix the sliced cucumbers and onions with the seasoning. It’s better to use a spoon rather than your hands for mixing. Using your hands can transfer body heat, causing the cucumber to release water. Mixing with a spoon helps maintain the cucumber’s crispness and minimizes wateriness. Once everything is well combined with the dressing, your delicious cucumber salad is ready to enjoy!
