Ingredients- 3 cucumbers
- 1/2 can Zero Soda (120ml)
- 1 Tbsp salt
- 5 Tbsp sugar
- 7 Tbsp vinegar
- 2 Cheongyang peppers (optional)
Cooking Instructions
Step 1
Thoroughly wash the cucumbers under running water. Use a peeler or knife to gently remove the bumpy skin. Then, cut each cucumber in half lengthwise.
Step 2
Slice the cucumber halves thinly lengthwise. Tip: For easier and safer slicing, insert a fork into one end of the cucumber and use a vegetable peeler or a sharp knife to slice thinly, similar to how you might shave.
Step 3
Arrange the sliced cucumbers neatly in a clean, airtight container. In a separate bowl, whisk together 1 Tbsp salt, 5 Tbsp sugar, and 7 Tbsp vinegar until dissolved. Pour this mixture over the cucumbers. If you like a touch of heat, thinly slice the Cheongyang peppers and add them to the container.
Step 4
Pour the remaining half can of Zero Soda (approximately 120ml) over the cucumbers and the pickling liquid. The soda adds a subtle sweetness and crispness.
Step 5
Seal the container tightly with its lid and refrigerate for 1 to 2 hours. The pickles will be ready to enjoy! For an even more developed flavor, let them pickle for at least a few hours or overnight.
