A super easy snack recipe to get kids to eat cabbage! This simple recipe takes just minutes to prepare and is perfect for a quick and nutritious treat. The crispy toast, fluffy cabbage and egg pancake, and tangy sauces create a delightful flavor combination that both children and adults will adore.
Main Ingredients- 1 handful fresh cabbage (approx. 100g), thinly shredded
- 2 slices thick bread
- 1 fresh egg
- 1 slice cheese
- A little butter (for greasing the pan)
Seasoning & Sauces- Ketchup to taste
- Mustard sauce to taste
- A pinch of salt
- A dash of pepper

Cooking Instructions
Step 1
Wash the cabbage thoroughly and drain any excess water. Shred it into very thin strips, about 1mm thick. Shredding thinly makes the texture softer and more appealing for children.

In a bowl, combine the drained shredded cabbage with 1 fresh egg. Add a pinch of salt and a dash of pepper for flavor.

Using a spoon or fork, mix the egg and cabbage together until well combined. Ensure the cabbage is evenly coated with the egg mixture. Mix gently to avoid mushing the cabbage.

Heat a pan over medium-low heat and melt a little butter. Pour about half of the cabbage and egg mixture into the pan, spreading it thinly into a square shape. Cook until golden brown and slightly crispy on both sides. Cooking it thinly ensures it’s cooked through and achieves a nice crispness.

Wipe the pan clean or use a separate pan. Add a little butter and toast the bread slices until golden brown and slightly crisp on both sides. Toasted edges add a delightful crunch.

Carefully place the cooked cabbage and egg pancake onto one slice of the toasted bread. Try to shape the pancake to fit the bread for a neat presentation.

Now for the flavor boost! Generously drizzle ketchup over the cabbage pancake, followed by a zigzag of mustard sauce according to your preference. If serving to children, you can skip the mustard and just use ketchup.

Top with a slice of cheese, then cover with the other slice of toasted bread. Lightly press down on the sandwich in the pan to help the cheese melt and the ingredients meld together.
