First, prepare the eggs, which will create the tender coating for your Jeon. Crack 3 eggs into a bowl and whisk them thoroughly with a fork or whisk until the yolks and whites are completely combined. Aim for a smooth, lump-free mixture.

You can use a small rectangular egg-roll pan or a regular frying pan. If using a regular pan, remember you’ll need to spread the egg thinly. I used an egg-roll pan here to achieve a slightly thicker layer of egg, which is quite lovely. Gauge the size of your pan to adjust the amount of egg mixture.

Now it’s time to cook the star ingredient: the beef brisket. Heat your pan over medium heat without adding any extra oil. Add about 150g of the thinly sliced beef brisket and cook. You can season it with herb salt as it cooks, or sprinkle with regular salt and pepper to your preference. This adds a wonderful savory depth.

It’s important to cook the beef brisket until it’s golden brown and nicely crisped. This will enhance the texture of your Jeon and make it even more delicious.
