Super Simple and Tender Egg and Vegetable Porridge

Even on busy mornings, this nutritious and tender egg and vegetable porridge can be ready in just 5 minutes! Here’s how to make it.
Main Ingredients
- 1 fresh egg
- 1 bowl of cooked rice (approx. 150g)
- 50g zucchini (about 1/4 small zucchini)
- 30g carrot (about 1/5 small carrot)
Seasoning & Others
- A pinch of stir-fry salt
- 1/2 tsp soy sauce or fish sauce
- 1 Tbsp sesame oil
- 500ml water

Cooking Instructions
Step 1
First, wash the zucchini and carrot thoroughly, peel them, and finely mince them. If preparing for children, mince them as finely as possible so they can eat them smoothly. Place the minced vegetables in a pot.
Step 2
Add 1 tablespoon of sesame oil to the pot. Sauté the minced vegetables over very low heat until they are slightly softened. This will enhance their flavor. Add a tiny pinch of stir-fry salt for a base seasoning.
Step 3
Once the vegetables are lightly sautéed, add 1 bowl of cooked rice and stir-fry them together. Continue to stir-fry for about 1 minute until the rice is well combined with the vegetables.
Step 4
Now it’s time to add about 500ml of water and bring it to a boil. The porridge might seem a little bland at first. At this stage, add about 1/2 teaspoon of soy sauce or fish sauce to adjust the seasoning. Using fish sauce can add a deep umami flavor without any fishy taste. Adjust the amount of salt or fish sauce according to your preference.
Step 5
Cook over medium-low heat, stirring constantly to prevent the rice from clumping and to help it break down smoothly. It’s important to keep stirring as the rice grains soften and the porridge thickens to your desired consistency.
Step 6
Once the rice has broken down to your desired consistency, crack 1 fresh egg directly into the pot. Adding the egg to the center of the boiling porridge works well.
Step 7
After adding the egg, gently stir with chopsticks or a ladle. Stir until the egg white is cooked and evenly distributed throughout the porridge.
Step 8
Your tender egg and vegetable porridge is now complete! Simmer for another minute or so to allow all the flavors to meld beautifully. Serve warm and enjoy!
