Main Ingredients

  • Beef (for braising) 300g
  • Whole peppercorns, a pinch
  • Bay leaves, 1-2
  • Carrot, 1/4
  • Spicy chili pepper, 1 (optional)

Braising Sauce

  • Soy sauce, 7 Tbsp
  • Sugar, 2 Tbsp
  • Corn syrup, 2 Tbsp (Oligosaccharide syrup can be substituted)
  • Minced garlic, 1 Tbsp
  • Water, 14 Tbsp (twice the amount of soy sauce)

Tip: Adding quail eggs or hard-boiled eggs will make your braised beef even richer! Today, we’ll focus on tender beef and crisp carrots instead of quail eggs.

It’s important to remove the blood from the beef. Place about 300g of beef in cold water and soak for about 20 minutes to let the blood drain out. During this time, you can prepare other dishes or take a short break.

After 20 minutes, drain the beef and rinse it once under cold running water. Removing the blood will make the beef look paler and result in a more tender texture after cooking. Now it’s time to start boiling.

While boiling the beef, it’s common to add ingredients like onions or green onions to remove any gamey smell. However, today we’ll keep it clean by using only bay leaves and whole peppercorns. If you’re not particularly sensitive to gamey smells, you can simply boil the beef without these additions. Boil the beef for about 10-15 minutes, or until it’s cooked through but still tender.

Preparing the braising sauce in advance will make the cooking process much smoother. In a bowl, combine 7 Tbsp of soy sauce, 2 Tbsp of sugar, 2 Tbsp of corn syrup (or oligosaccharide syrup), 1 Tbsp of minced garlic, and 14 Tbsp of water (twice the amount of soy sauce). Stir well until the sugar is dissolved.

Remove the boiled beef from the pot. Add an appropriate amount of water to the pot and include the sliced carrots. If you prefer a spicy kick, add 1 spicy chili pepper. The spiciness will cut through the richness of the braised beef, making it even more delicious.

Pour the prepared braising sauce into the pot and bring it to a boil over high heat. Once it starts boiling, reduce the heat to low and let it simmer until the sauce thickens and coats the beef. Stir occasionally to ensure the sauce is evenly distributed.

Once the sauce has thickened and is glossy, your delicious soy braised beef is ready! You can add boiled quail eggs, mushrooms, or hard-boiled eggs to make it even more substantial. It’s incredibly delicious served over hot rice!
