Beginner-Friendly Kimchi Fried Rice Using Only Aged Kimchi!

I absolutely love kimchi fried rice! Today, I’m sharing a simple recipe for kimchi fried rice made with just aged kimchi, which I used to make often when I lived alone.

Main Ingredients

  • 1 cup aged kimchi (about 200g), chopped
  • 1.5 bowls of warm cooked rice (about 300g)
  • A small amount of green onion (optional)

Seasoning & Others

  • 1 Tbsp cooking oil (15ml)
  • 1/2 Tbsp beef-flavored dasida (MSG seasoning, about 5g)
  • 1/2 Tbsp perilla oil (7ml)

Cooking Instructions

Step 1

First, finely chop the green onion. If you don’t have green onions, you can skip this step. If skipping the green onions, proceed directly to stir-frying the aged kimchi.

Heat 1 Tbsp of cooking oil in a pan. Add 1 cup of chopped aged kimchi. (If using green onion, add the chopped green onion first to the pan and stir-fry over low heat until fragrant to make green onion oil, then add the kimchi.) Stir-fry the aged kimchi over medium-low heat, flipping it frequently, for about 3-5 minutes until it’s softened and slightly caramelized. Stir-frying the kimchi well helps to remove any unpleasant fermented smell and enhances its savory flavor.

Once the kimchi is well stir-fried, add 1/2 Tbsp of beef-flavored dasida and continue to stir-fry with the kimchi for another minute. The dasida helps to season the kimchi and adds extra umami.

When the kimchi is fully cooked, add 1.5 bowls of warm cooked rice. Use a spatula to break up the rice clumps and stir-fry until the kimchi and seasoning are evenly distributed. It’s important to ensure each grain of rice is coated with the kimchi mixture. Finally, drizzle in 1/2 Tbsp of perilla oil and give it a quick stir to finish. Your delicious kimchi fried rice is ready!

Serve the finished kimchi fried rice attractively! Even if you skipped the green onion oil, the combination of aged kimchi, dasida, and perilla oil creates a wonderfully tasty dish. Feel free to add a fried egg or some shredded seaweed on top for extra flavor.
