Ingredients

  • 3 sheets of fish cake (eomuk)
  • 500ml water (approx. 3 cups)
  • 5-6 dried anchovies for broth
  • 1/4 onion
  • 1/2 green onion stalk
  • 3 Tbsp soy sauce
  • 1/2 Tbsp sugar
  • 1/3 Tbsp minced garlic
  • 3-4 Tbsp cooking wine (mirin or sake)

Cooking Instructions

Step 1

First, place the dried anchovies in a pot without any oil and stir-fry them. Removing the heads and guts of the anchovies can result in a cleaner taste, but you can also use them whole without special preparation. Stir-fry them just until any fishy smell dissipates, then add 3 cups (approximately 500ml) of water and bring to a boil to create the broth.

While the broth is boiling, thinly slice 1/4 onion and diagonally slice 1/2 green onion stalk. Add the prepared onion and green onion to the anchovy broth and continue to boil. The vegetables will add a refreshing and deeper flavor to the soup.

Now, add the seasonings to flavor the broth. Stir in 3 tablespoons of soy sauce, 1/2 tablespoon of sugar, and 1/3 tablespoon of minced garlic. This combination creates a savory broth that even children will enjoy.

Prepare the fish cakes. You can cut them into various shapes according to your preference. I chose to skewer two of the three fish cakes onto wooden skewers or chopsticks, and sliced the remaining one directly into the pot. Skewering them makes them easy to pick up later and looks appealing.

Add the prepared fish cakes to the boiling broth. Fish cakes cook very quickly, so they only need to simmer for about 1-2 minutes after being added. Once the fish cakes are tender, your delicious fish cake soup is ready! Enjoy it hot to ward off the chill.
