Hello everyone! Today, I’m sharing a recipe for an incredibly simple yet delicious 5-minute side dish: Enoki Mushroom Stir-fry with Oyster Sauce. It’s a recipe that even solo dwellers and cooking beginners can make successfully, and it’s budget-friendly too! You can achieve a fantastic flavor with just scallion oil and oyster sauce. Adding a touch of sesame oil, sesame seeds, and pepper enhances the aroma wonderfully, so be sure to include them! It’s perfect served over freshly steamed rice!
Main Ingredients- 1 packet Enoki mushrooms (trim ends, then separate)
- 20g Carrot (thinly julienned)
- 1/4 stalk Scallion (finely chopped)
- 2 tbsp Cooking oil
Seasoning- 1 tbsp Oyster sauce
- 0.5 tbsp Sesame oil (adjust to taste)
- 0.5 tbsp Toasted sesame seeds (adjust to taste)
- Pinch of Black pepper (to taste)

Cooking Instructions
Step 1
First, prepare all the ingredients needed for the Enoki Mushroom Stir-fry with Oyster Sauce. Thinly julienne the carrot and finely chop the scallion.
Step 2
Wash the enoki mushrooms thoroughly under running water. Trim off the hard base and then gently pull them apart with your hands into bite-sized pieces. Be careful not to tear them too forcefully, as they might clump together.
Step 3
Have your julienned carrots and chopped scallions ready. Slicing the carrots thinly will ensure they blend well with the texture of the enoki mushrooms when stir-fried.
Step 4
Heat a pan over medium-low heat and add 2 tablespoons of cooking oil. Add the chopped scallions and stir-fry until they release a fragrant aroma. Then, add the prepared carrots and stir-fry briefly for about 5 seconds to slightly soften them.

Now, add all the enoki mushrooms to the pan. We’ll stir-fry them until they start to wilt.

Once the enoki mushrooms begin to soften, add 1 tablespoon of oyster sauce around the edges of the pan. Turn the heat to high and stir-fry quickly for about 5 seconds, ensuring the sauce coats the mushrooms evenly and they absorb the flavor.

Just before turning off the heat, add 0.5 tablespoon of sesame oil, 0.5 tablespoon of toasted sesame seeds, and a pinch of black pepper to enhance the flavor. Feel free to adjust the amounts according to your preference.
