This Kimchi Sujebi (hand-pulled noodle soup) comes together in a flash, just like making ramen, using concentrated broth cubes and store-bought sujebi dough. It’s perfect for busy days when you want a quick yet satisfying meal. Enjoy this simple yet deeply flavorful Kimchi Sujebi for a comforting dish!

Basic Ingredients

  • 1 serving store-bought sujebi dough
  • 700ml water
  • 2 concentrated broth cubes (seafood or anchovy flavor)
  • 1 Tbsp minced garlic

Cooking Instructions

Step 1

In a pot, bring 700ml of water to a boil. Add 2 concentrated broth cubes and let them dissolve. Once boiling, stir in 1 Tbsp of minced garlic for added aroma. (Using hot water will help the broth dissolve faster, but room temperature water works too.)

Finely chop about 0.5 bowl of ripe kimchi using scissors. If your kimchi is very sour, you can add a pinch of sugar to balance the flavor.

Once the broth is boiling, add 1 Tbsp of soup soy sauce, 1 Tbsp of mentsuyu (or substitute), and 1 Tbsp of gochugaru. Stir well to combine the seasonings. Add the chopped kimchi and taste. Adjust seasoning with more soy sauce if needed. (If using fresh zucchini, add it now. If using frozen zucchini, depending on how thawed it is, you might want to add it with the sujebi or later.)

Add the store-bought sujebi dough to the boiling broth and cook for about 6 minutes. Stir occasionally to prevent the noodles from sticking together.

When the sujebi noodles are almost cooked, add the sliced onion and simmer for another 2-3 minutes. The onion will soften and add a natural sweetness to the broth.

Add the prepared mushrooms and cook for about 2 more minutes until tender. Turn off the heat once the mushrooms are cooked.

Finally, garnish with chopped Korean chili pepper, diagonally sliced green onion, and seaweed flakes. Add more chili peppers if you prefer it spicier. Serve hot and enjoy!
