  • 1/4 head (approx. 300g) Kimchi (well-fermented)
  • 1 stalk (approx. 100g) Green Onion

Cooking Instructions

First, prepare 1 can (150g) of tuna, the star of our dish. Don’t discard the oil from the can, as we’ll use it for stir-frying.

Chop 1/4 head (about 300g) of kimchi into bite-sized pieces. If the pieces are too large, they might be difficult to cook evenly, so aim for smaller pieces, even for kids. Using well-fermented kimchi will add a deeper flavor!

Finely slice 1 stalk (about 100g) of green onion. The sweet aroma of the green onion will further enhance the flavors of the tuna and kimchi.

Heat a pan over medium heat. Open the can of tuna and add the tuna to the pan. Use a sieve or a spoon to press down and drain the remaining tuna oil from the can into the pan. This oil will add wonderful flavor to the dish.

Add 1 tablespoon of perilla oil to the pan for an extra nutty and rich flavor. If you don’t have perilla oil, you can substitute it with cooking oil, but perilla oil offers a superior aroma.

Add the sliced green onions to the pan and stir-fry for about 1 minute. Cook until a fragrant aroma is released and the onions are well combined with the oil.

Once the aroma of the green onions is sufficiently released, add the chopped kimchi to the pan and stir-fry together. Stir-fry for about 2 minutes, allowing the kimchi to absorb the flavors of the oil and green onions.

Now it’s time to add the seasonings. Sprinkle 2 tablespoons of red pepper flakes (gochugaru) and 1 tablespoon of sugar evenly over the kimchi. The sugar helps balance the sourness of the kimchi and adds a touch of sweetness and umami.

Stir-fry all the ingredients evenly to combine the seasonings with the kimchi. It’s important to stir occasionally to prevent the kimchi from sticking to the pan. Stir-fry for about 3 minutes, allowing the kimchi to reduce its moisture and absorb the flavors.

Once the kimchi is well stir-fried, add the prepared tuna on top of the stir-fried kimchi. Gently mix and stir-fry together for about 1 minute until the kimchi and tuna are well combined.
