The Ultimate Easy Veggie Fried Rice Recipe That Even Picky Eaters Will Devour!

My nephew came over for a visit, so I whipped up this super simple veggie fried rice using whatever vegetables I had on hand.

Ingredients
  • 1/3 Carrot (finely diced)
  • 1/3 Bell Pepper (any color, finely diced – using multiple colors makes it more appealing!)
  • 1/4 can Spam (diced into small cubes)
  • 2 bowls Cooked Rice (chilled or warm rice works perfectly)
  • 1 Tbsp Oyster Sauce
  • 1 Tbsp Cooking Oil

Cooking Instructions

Step 1

First, prepare the vegetables and Spam that will form the delicious base of your fried rice. Finely dice the carrot, bell pepper, and Spam into small, uniform pieces (about 0.5 cm or 1/4 inch). This size is ideal for children and ensures everything cooks evenly. Heat 1 tablespoon of cooking oil in a pan over medium heat. Add the diced carrot, bell pepper, and Spam. Sauté for 2-3 minutes until the vegetables begin to soften and the Spam releases its savory oils, creating a wonderful aroma.

Step 2

Once the vegetables and Spam are nicely sautéed, it’s time to add the rice. Add the 2 bowls of cooked rice to the pan with the sautéed ingredients. If your rice is clumped together, gently break it apart with a spatula or spoon as you mix it with the vegetables.

Step 3

After adding the rice, it’s crucial to stir-fry it while separating the grains so it doesn’t clump. Continue to cook over medium heat for about 3 minutes. You want the rice grains to become slightly toasted and fluffy, which will significantly improve the texture of your fried rice.

Step 4

Once the rice grains are nicely separated and have a slightly toasted texture, add 1 tablespoon of oyster sauce to enhance the flavor. Stir well to ensure the oyster sauce is evenly distributed among the rice and other ingredients. Continue to stir-fry for another 2 minutes. Be careful not to let the oyster sauce burn.

When the oyster sauce has melded beautifully with the rice, giving it a delicious color, and all the ingredients are evenly incorporated, your flavorful veggie fried rice is ready! Taste and adjust seasoning if needed with a pinch of salt or a splash of soy sauce.
