Here’s a super simple toast pizza recipe you can whip up in minutes with leftover ingredients from your fridge. The chewy toast topped with an abundance of vegetables, sausage, and hearty potatoes makes it a perfect meal replacement. I’ll share tips on how to make it delicious, whether you use an oven or not! From kids’ snacks to a simple brunch, create this magical toast pizza that the whole family will love.
Main Ingredients- 2 slices of bread
- 1 medium potato
- 1/4 onion
- 1/4 bell pepper (using different colors makes it prettier)
- 1/2 sausage (can be adjusted to your preference)
Cooking Instructions
Step 1
First, wash the potato thoroughly and peel it. Cut it into about 6 wedge-shaped pieces, roughly 0.5 cm thick. Place the potato pieces in a microwave-safe bowl, add 1-2 tablespoons of water to keep them moist, cover with plastic wrap, and poke a few holes with a fork. Microwave for about 1 minute 30 seconds to 2 minutes to partially cook the potato. This will help it cook faster and become softer in the oven.
Step 2
Wash the bell pepper and onion, remove the seeds, and thinly slice them into strips. Slice the sausage into diagonal pieces about 0.5 cm thick, or into rounds. Slicing the vegetables thinly is recommended so they cook through properly on the toast.
Step 3
Take the two slices of bread and spread 1 tablespoon of tomato sauce evenly on the top of each slice. Spread the sauce all the way to the edges for extra flavor. Don’t spread it too thickly, as it might become too salty.
Step 4
Place a slice of cheddar cheese on top of the tomato sauce on each bread slice. Then, arrange the julienned onion and bell pepper attractively over the cheese. Using colorful bell peppers will make your pizza visually appealing.

Carefully transfer the bread slices onto an oven tray or an oven-safe dish (a heatproof container that fits the bread slices). Arrange the pre-cooked potato wedges and the sliced sausage nicely on top. If you prefer, you can thinly slice and sauté the potatoes before adding them for extra flavor.
Step 6
Generously sprinkle mozzarella cheese over the toppings. The cheese will melt and deliciously bind all the ingredients together. Add the black olive slices here and there for an authentic pizza flavor. Place in a preheated oven at 200°C (390°F) and bake for 10-15 minutes, or until the cheese is golden brown and bubbly and the crust is crisp. If you don’t have an oven, you can also cook it slowly over low heat in a frying pan with a lid.
Step 7
Carefully remove the golden brown toast pizza from the oven. Finally, sprinkle a pinch of dried parsley for garnish, and your wonderful homemade toast pizza is complete! It’s best enjoyed immediately while warm.
