It’s versatile enough for any application! Today, we’re bringing you a recipe for sweet potato pie using this wonderful sweet potato mash. You don’t need fancy pastry sheets; just two slices of bread are enough to create a simple and satisfying pie. This easy recipe is perfect for anyone to follow, making it a delightful treat for kids and adults alike!

Ingredients for Sweet Potato Pie
  • Sweet potato mash
  • 2 slices of bread
  • 1 egg yolk

Cooking Instructions

Step 1

For this super simple sweet potato pie, we’ll be using an air fryer instead of an oven. The air fryer is fantastic because it heats up quickly, doesn’t require preheating, and cooks everything fast, making it incredibly convenient. Of course, you can use a conventional oven as well!

Step 2

For a neater appearance, I’ve trimmed the crusts off the bread. But don’t throw those crusts away! You can toast them in the air fryer until crispy and enjoy them like little crackers – they’re surprisingly delicious!

Step 3

Once the crusts are removed, use a rolling pin to flatten the bread slices as thinly as possible. This will help the pie crust become extra crispy and hold its shape beautifully.

Step 4

After flattening the bread with the rolling pin, fold each slice in half. Then, place a generous amount of sweet potato mash in the center of the folded bread. Be careful not to overfill, as too much filling might cause the pie to burst open.

Step 5

Gently press the edges of the folded bread together with a fork to seal the filling inside. This step is crucial to prevent the sweet potato mash from leaking out. For a beautiful golden-brown finish when cooked, lightly brush the top of the pie with egg yolk. I also added a sprinkle of parsley for extra color and aroma. Enjoy your delicious homemade pie!
