  • 5-7 Green Chili Peppers (Korean ‘Gwiri’ type)
  • 1/2 stalk Scallion (Green Onion)
  • Pickled Spicy Chilies (optional)
  • Pinch of Salt
  • Pinch of Black Pepper
  • Pinch of Sesame Seeds

Cooking Instructions

Spread the thinly sliced pork belly in a wide pan or wok and heat over medium heat. Stir-fry the pork belly, ensuring it cooks evenly. Since pork belly releases its own fat, you don’t need to add extra oil. Once the pork belly is about halfway cooked, season lightly with salt and pepper. The pork belly itself is already flavorful, so minimal seasoning is best.

When the pork belly is about 70% cooked, add the washed and drained bean sprouts to the center of the pan. Prepare to stir-fry them with the pork belly as they wilt and cook.

Let’s make use of those leftover green chili peppers from the fridge! Wash them thoroughly under running water, trim the stems, and snip them into bite-sized pieces with scissors. Using leftover vegetables not only reduces food waste but also adds more flavor to your dish. Add the snipped chilies to the pan.

For a spicy kick, consider using store-bought pickled spicy chilies. While the dish is delicious without them, they add a special flavor profile if you enjoy heat. Utilizing pantry staples is a great strategy!
