Main Ingredients for Perilla Leaf Kimchi- 80 fresh perilla leaves
- 1/2 sweet onion
- 10 stalks of green onion (scallions)
- 1 Cheongyang chili pepper (for spiciness)
- 1 red chili pepper (for color)
Flavorful Seasoning Sauce- 3 Tbsp soy sauce (for savory depth)
- 2 Tbsp anchovy sauce (for umami)
- 3 Tbsp water (for balance)
- 2 Tbsp plum extract (for sweetness and tang)
- 1 Tbsp sugar (to enhance sweetness)
- 4 Tbsp red chili flakes (for vibrant color and heat)
- 1 Tbsp perilla oil (for nutty aroma)
- 1 Tbsp minced garlic (for pungent flavor)
- 3 Tbsp soy sauce (for savory depth)
- 2 Tbsp anchovy sauce (for umami)
- 3 Tbsp water (for balance)
- 2 Tbsp plum extract (for sweetness and tang)

Cooking Instructions
Step 1
First, wash the perilla leaves thoroughly under running water. After draining the water, carefully cut each leaf in half to ensure the kimchi seasoning penetrates well.
Step 2
Peel the onion and thinly slice it into fine julienne strips. Remove the seeds from the red and Cheongyang chili peppers and mince them finely. Chop the green onions into small pieces. Preparing the vegetables like this helps the seasoning blend harmoniously.
Step 3
Now it’s time to make the delicious seasoning sauce. In a bowl, combine 3 Tbsp soy sauce, 2 Tbsp anchovy sauce, 3 Tbsp water, 2 Tbsp plum extract, 1 Tbsp sugar, 4 Tbsp red chili flakes, 1 Tbsp perilla oil, and 1 Tbsp minced garlic. Stir well until all the seasoning ingredients are evenly mixed.
Step 4
Add the prepared vegetables to the seasoning sauce made in step 2 and mix gently to coat. Then, add the perilla leaves to the sauce. Carefully untangle the leaves and gently toss them with the seasoning until they are evenly coated. Your delicious perilla leaf kimchi is now ready!
