When you’re craving pasta but don’t have a jar of sauce, you can whip up a delicious Neapolitan spaghetti using just ketchup and oyster sauce! This recipe offers a delightful blend of pasta, fresh vegetables, and savory sausage, making it perfect for a quick meal or a special treat.

  • Penne or Spaghetti Pasta, 3 servings (approx. 300g)
  • Sausage, 300g
  • Onion, 1 medium
  • Broccoli, 150g
  • Minced Garlic, 1 Tbsp

Cooking Instructions

Thoroughly clean the broccoli by soaking it in water with 1 teaspoon of baking soda for 20 minutes. Rinse it under running water, trim into bite-sized florets, and set aside.

Slice the sausage into bite-sized pieces, about 1cm thick. Peel and thinly slice the onion lengthwise. Cutting the vegetables into uniform sizes will help them cook evenly.

Bring a pot of water to a boil, add a pinch of salt, and blanch the broccoli florets for about 2 minutes. This will help maintain their vibrant color and a slight crispness. Immediately drain and rinse with cold water.

In a large pot, bring plenty of water to a rolling boil. Add 1 tablespoon of salt. Cook the pasta according to package directions, but aim for al dente (about 1-2 minutes less than the suggested time). Once cooked, drain the pasta and toss with 1 tablespoon of olive oil to prevent sticking. Reserve about 1 cup of the pasta water before draining.

Heat 2 tablespoons of olive oil or cooking oil in a large skillet or wok over medium heat. Add the minced garlic and sauté until fragrant, about 30 seconds. Add the sliced onions and cook until softened and translucent, stirring occasionally. Cooking the onions well will bring out their natural sweetness.

Once the onions are semi-translucent, add the sliced sausage and blanched broccoli to the skillet. Continue to sauté, allowing the sausage to release some of its fat and mingle with the vegetables.

When the sausage is lightly browned and the vegetables are tender-crisp, add the cooked pasta and about 1 cup of the reserved pasta water to the skillet. Increase the heat to high and toss everything together quickly to coat the pasta and ingredients with the moisture from the pasta water, which helps create a cohesive sauce.

Now, it’s time to add the key sauce ingredients. Pour in the ketchup (7 Tbsp) and oyster sauce (2 Tbsp). Continue to stir-fry over high heat for another 1-2 minutes, ensuring the sauce evenly coats the pasta and other ingredients. The goal is to let the sauce thicken slightly and adhere to everything.

Once the sauce has nicely coated all the ingredients, season with black pepper to your liking. Give everything a final toss to ensure the flavors are well combined. Serve immediately onto warm plates. Enjoy your delicious Penne Neapolitan Spaghetti!
