Basic Ingredients- 150g Pancake Mix
- 4 Medium Bananas
- 4 Fresh Eggs
- 30g Unsalted Butter
Flavor Enhancers- 3 Tbsp Milk (approx. 45ml)
- 0.5 tsp Cinnamon Powder (approx. 2g)
- 3 Tbsp Milk (approx. 45ml)
- 0.5 tsp Cinnamon Powder (approx. 2g)
Cooking Instructions
Step 1
Prepare all the ingredients needed to make your delicious banana bread. Fresh bananas and fresh eggs are the foundation for a great taste.
Step 2
First, take about 1.5 Tbsp (approx. 15g) of the 30g butter and microwave it for about 20 seconds until fully melted. To prevent splattering, cover the butter with a lid with holes or plastic wrap, poke 4-5 small holes with a toothpick, and then microwave it.
Step 3
Crack 4 fresh eggs into a bowl. Add the 3 Tbsp of milk and the melted butter. Whisk everything together gently with a whisk until well combined and smooth.
Step 4
Add the 150g of pancake mix and the 0.5 tsp of cinnamon powder to the egg mixture. Stir until there are no lumps and everything is evenly incorporated. The batter should be slightly thick; when you lift a spoonful, it should drop off slowly.
Step 5
Peel and finely chop the 4 medium bananas. Chopping them finely, rather than in large pieces, will help them mix better with the batter and create a softer texture in the bread. Add the chopped bananas to the batter and gently fold them in with a spatula.
Step 6
Now, it’s time to cook the bread. Melt the remaining 0.5 Tbsp (approx. 7-8g) of butter in your skillet, coating the entire pan with a thin layer. Once the butter is melted and coats the pan, pour the banana batter into the center of the skillet and let it spread naturally.
Step 7
After pouring the batter, make sure to cover the skillet with a lid. Crucially, seal any steam vents or holes on the lid with baking tape or regular tape. This traps the moisture inside, ensuring the bread cooks through evenly and stays moist.
Step 8
The heat setting is critical. Cook over ‘the lowest possible heat’ to gently bake the bread. This prevents the outside from burning before the inside is cooked. Maintain a very low heat with patience.
Step 9
When you first start cooking, you’ll notice condensation forming on the inside of the lid. This is a natural sign that the moisture from inside the bread is steaming, so don’t worry.
Step 10
After cooking on low heat for about 30 minutes, the water droplets on the lid will start to disappear or become barely visible. This indicates that the moisture inside the bread has evaporated sufficiently, and it’s cooked through.
Step 11
Before turning off the heat, carefully lift the lid to check the bread. If the top of the bread springs back when lightly touched with your fingertip and no batter sticks to your finger, it’s done. After about 30 minutes of cooking, it was perfectly cooked inside.
Step 12
Remove the well-baked banana bread from the skillet and let it cool slightly. Once it’s warm enough to handle, slice it into your desired serving pieces. With plenty of banana added, it’s incredibly soft and delightfully sweet. It makes a wonderful healthy snack for children.
