  • 2 Tbsp granulated sugar
  • 1 Tbsp water

First, it’s crucial to wash the Shine Muscat grapes thoroughly. Rinse them under running water, then sprinkle a little baking soda and gently scrub with a soft brush or your fingers. This is effective for removing any remaining impurities or pesticides on the skin.

After washing, rinse the Shine Muscat grapes multiple times with clean water to completely remove any baking soda residue. Then, use a salad spinner or a colander to remove as much moisture as possible. If the grapes are wet, the sugar coating won’t adhere well.

Even after using a salad spinner, pat each grape dry with a paper towel to remove any remaining moisture. A completely dry surface is essential for the sugar syrup to coat beautifully and achieve a crispy texture.

Pierce the prepared Shine Muscat grapes with skewers or toothpicks as needed. Insert them into the firmer part of the grape so you can easily hold and rotate them while coating. Be careful not to pierce too deeply, as this could crush the grape.

Now, let’s make the sugar syrup using the microwave. In a paper cup, combine 2 tablespoons of granulated sugar with 1 tablespoon of water (sugar to water ratio of 2:1). Microwave for 30 seconds, then another 30 seconds, and another 30 seconds. Follow with two 20-second intervals (totaling about 1 minute and 50 seconds). Absolutely do not stir in between! The sugar water will naturally mix and boil, developing a light brown color when ready. (Adjust the time based on your microwave’s power.)

The sugar syrup will be very hot straight from the microwave, so be cautious! Once you see the syrup boiling and developing a light brown hue, quickly dip the skewered Shine Muscat grapes into the syrup, rotating them to ensure an even coating.
