Enjoy delicious marinated pork ribs in just 1 hour and 30 minutes, including marinating time! I found this recipe while looking for ways to make the most of my time after work. I slightly adapted a recipe from Chef Yoo Gwi-yeol, a renowned culinary master known for his incredible skills. This method is perfect for saving time and came together wonderfully. Finishing with a touch of torch flame added a smoky aroma, reminiscent of the delicious charcoal-grilled ribs I enjoyed at restaurants when I was younger!

For Marinating Meat (Tablespoon Measure)
  • Lemon juice, 1 Tbsp
  • Honey, 2 Tbsp

Marinade (Tablespoon Measure)
  • Dark soy sauce (No-dou Yiu), 1 Tbsp (for color and depth)
  • Soy sauce, 8 Tbsp
  • Corn syrup, 2 Tbsp
  • Sugar, 3 Tbsp
  • Minced garlic, 1 Tbsp
  • Black pepper, a pinch
  • Mustard, 1/2 tsp
  • Minced green onion, 5 Tbsp
  • Water, 100ml

Cooking Instructions

Step 1

Let me show you the pork ribs I’m using. I used fresh pork ribs that were already cut thickly in the LA Galbi style. If you’re using whole ribs, trim them by following the bone line to create long, flat pieces. We’ll marinate and cook them just as they are.

Step 2

Score the meat diagonally in a diamond pattern. This helps tenderize the meat and allows the marinade to penetrate deeply, resulting in a much more flavorful dish.

Step 3

The original recipe calls for blending corn syrup and fresh lemon, but I’m using lemon juice for convenience. Add 1 Tbsp of lemon juice and 2 Tbsp of honey to the meat and gently mix. Cover with plastic wrap and refrigerate for 30 minutes to marinate. The citric acid in lemon effectively removes any gamey odor from the pork, and the sugar helps tenderize the meat very quickly.

Step 4

While the meat is marinating, let’s prepare the delicious soy sauce-based marinade. Combine all the marinade ingredients, measured with a tablespoon, in a bowl and mix well.

Step 5

I added 1 Tbsp of dark soy sauce (No-dou Yiu) to the marinade. This not only deepens the savory flavor but also gives the meat a much more appetizing color. Gently mix the meat and marinade again to ensure it’s evenly coated. Cover with plastic wrap and refrigerate for another 30 minutes. A total of 1 hour of marinating allows the flavors to meld beautifully for a richer taste.

Step 6

Now it’s time to cook the marinated ribs. Heat a pan over high heat until very hot. Then, add the meat and cook evenly. Once the meat starts to sizzle and bubble, reduce the heat to medium-low and continue cooking slowly. This method ensures the outside is beautifully browned while the inside remains juicy.

Step 7

Flip the meat occasionally as it cooks. When it’s about halfway done, cut it into bite-sized pieces. At this stage, you can add the Vietnamese chili peppers if you like, cooking them together with the meat for a spicy kick.

Step 8

Let the ribs simmer and bubble in their juices. When a nice sauce has formed, increase the heat slightly to reduce it quickly. Just before serving, sprinkle a generous amount of minced green onion over the hot ribs. This adds a lovely aroma and enhances the overall flavor for a perfect finish!

Step 9

Your delicious marinated ribs are ready! They look fantastic served directly from the pan without any fancy plating. I decided to pair them with some spicy cold noodles (bibim guksu) this time.
