This is truly delicious! It’s essential to serve it chilled. Since ladyfingers or traditional sponge cake are a no-go for low-carb diets, we’ve ingeniously used the microwave for a simple base. While it won’t be as melt-in-your-mouth soft as a classic sponge, it’s a delightful treat that our keto-conscious friends will thoroughly enjoy. ^^

For the Cake Base

  • 40g Almond Flour
  • 1/2 tsp Baking Soda
  • 1 Egg

Cooking Instructions

Step 1

Let’s start by making the cake base. In a bowl, lightly whisk one egg. Then, add 40g of almond flour and 1/2 tsp of baking soda. Mix everything together until well combined. (Whisking the egg beforehand makes it easier to incorporate the dry ingredients.) Pour the batter into a microwave-safe dish and microwave for about 90 seconds. Once cooked, remove the cake and let it cool completely. Cooling it while you prepare the next steps will save you time.

Step 2

Prepare the strong coffee or espresso that will be used to soak the cake layers. You can adjust the amount of coffee according to your preference. Set this aside for now; it will be used shortly.

Step 3

Now, let’s prepare the creamy filling, the heart of our tiramisu! In a separate bowl, ensure your cream cheese (200-250g) is at room temperature and softened. Add 4 Tbsp of heavy cream and 3-4 Tbsp of Swerve (or your preferred low-carb sweetener). Whisk or stir until the mixture is smooth and well combined. Using a sweetener like Swerve allows us to keep this recipe low-carb.

Step 4

To assemble your tiramisu, take your serving dishes (individual cups or a small bowl). Lightly dust the bottom with unsweetened cocoa powder using a sieve. Cut the cooled cake base into pieces, arrange them in the dish, and gently brush or drizzle them with the prepared coffee. Next, generously spoon the creamy filling over the soaked cake. Repeat this layering process with cake and filling until your dish is full. Finish by dusting the top generously with more cocoa powder. For the best flavor and texture, it’s crucial to chill the tiramisu for at least 2 hours in the refrigerator. (If you’re in a hurry, you can place it in the freezer for about 30 minutes.) This tiramisu is absolutely best enjoyed when thoroughly chilled. Enjoy your delicious creation!
