Main Ingredients- Air fryer chicken (thigh or drumettes) 700g
- Red bell pepper 1/2
- Green bell pepper 1/2
- Green onion 1 stalk
- Minced garlic 3 Tbsp
- Chili oil 3 Tbsp
- Dried Vietnamese chili peppers 7-8
- Black pepper 1 tsp

Cooking Instructions
Step 1
First, prepare the chicken for the air fryer. While the chicken is cooking in the air fryer, split the green onion in half lengthwise and then chop it into roughly 3-4 cm pieces. This helps to release more of the onion’s aromatic flavor.

Remove the stem and seeds from the red bell pepper, then finely dice it into approximately 0.5 cm cubes. These vibrant red pieces will add beautiful color to your Gunmandu.

Similarly, remove the stem and seeds from the green bell pepper and dice it finely into the same 0.5 cm size as the red bell pepper.

Now, gather all the ingredients for stir-frying in one place. Combine the diced red and green bell peppers, minced garlic, chili oil, and the whole dried Vietnamese chilies in a bowl. Having them prepped makes the next step much smoother.

Heat 3 Tbsp of chili oil in a wide pan over medium heat. Once fragrant, add the minced garlic, dried Vietnamese chilies, and the chopped green onion. Stir-fry for about 1 minute, being careful not to burn the ingredients. This step is crucial for infusing the oil with aromatic flavors from the garlic and green onion, which will form the base of your delicious sauce.

After the aromatics have bloomed, add the diced red and green bell peppers to the pan. Stir-fry them together with the other ingredients for about 1 minute. You want the vegetables to be slightly tender but still retain a pleasant crunch.

It’s now time to add the sauce, the key to a great Gunmandu! In a separate bowl, whisk together the water, sugar, vinegar, and salt until well combined. Carefully pour this sauce mixture into the pan.

While the sauce is coming to a simmer, add 1 tsp of black pepper. Once the sauce is bubbling, add the pre-cooked chicken from the air fryer into the pan. Toss everything together gently to ensure the chicken pieces are evenly coated with the sauce.
Step 9
Continue to stir-fry for another 2-3 minutes, or until the sauce has thickened slightly and beautifully coats the chicken, creating a glossy finish. Keep an eye on the heat to prevent the sauce from burning. Stirring continuously will ensure the chicken is perfectly glazed. Serve immediately for the best crispy and flavorful experience!
